Baked Banana Oat Bars
These baked oat bars are super easy to throw together, and make a delicious and healthy breakfast, snack or anytime treat.

A little about this recipe
I wasn’t sure if we should call this recipe “Baked Banana Oat Bars” or “Peanut Butter Chocolate Oat Bars” or “Healthy Gluten Free Breakfast Bars” or “Baked oatmeal squares” or about a dozen other options. I also couldn’t decide if the recipe should have peanut butter, chocolate, raisins, cranberries, pecans, walnuts or coconuts! My point here is this: these bars are about the most versatile recipe ever. Call them whatever you like, eat them whenever you like, and throw whatever you like in them! No matter what you decide, this naturally-sweetened, gluten-free treat will be delicious, healthy, and easy!
This recipe is a true “one-bowl recipe” which makes it fast enough to whip up as an after-school snack! And since it is full of nourishing ingredients and zero processed sugar it can also be a great breakfast for a busy morning. I’m guessing you can store them in the fridge and I’m sure you could freeze them as well. But to be honest, a pan of these never lasts long enough around here to worry about storing them.

Baked Banana Oat Bars

Instructions
Preheat oven to 350° and grease a 9x9 or 7x11 inch pan
Using a large bowl mash the bananas well, then add in the rest of the wet ingredients: eggs, vanilla, peanut butter, milk, and maple syrup.
Add in the rest of the dry ingredients: oats, pecans, chocolate chips (or whatever other ingredients you want to toss in), baking powder, cinnamon, and salt, and stir it all together.
Pour into your pan, smooth out the top and bake for around 40 minutes or until the edges are nice and browned. The batter will look very wet, but don’t worry the oats will absorb a lot of liquid! Let them cool a bit before slicing, but they are perfect when still warm from the oven.
