These adorable gluten-free cookies taste just like a peanut butter and jelly sandwich! Full of oats, nuts, and grass-fed butter, they are not only delicious, but full of healthy ingredients to keep you full and energized! 

This recipe makes 12 perfect sized cookies, but you could easily make them mini to be more bite sized. The batter whips up quickly in one bowl with no special mixer needed, so there’s really no reason not to make a batch any time of day. Perfect with a cup of coffee or glass of milk! And I love that these cookies are healthy enough for an afterschool snack that won’t ruin my kids dinner or give them a crazy sugar high. Win. Win.

Ingredients

  1. Preheat oven to 350° and line a baking sheet with parchment paper.

  2. Over low heat, melt 4 tbsp butter in a saucepan on the stove.

  3. In a medium sized bowl, mix together the oat flour, oats, nuts, cinnamon, baking powder, and salt.

  4. Once mixed, pour in melted butter, maple syrup, peanut butter, and vanilla. Stir until well combined.

  5. Scoop batter into 12 heaping tablespoon sized balls. Round and then flatten while making an inch sized indentation in the center with your thumb. Press together gently to keep dough from cracking.

  6. Fill cookie indentation with approximately 1 tsp of jam or jelly. You can get crazy and get as jammy as you'd like. No judgement here.

  7. Bake for 13-15 minutes, and let cool for a few minutes before removing to a cooling rack. They will be very soft and a little crumbly until they cool and set up. Enjoy with coffee or milk any time of day!
