Baked Spinach Meatballs

These easy, gluten-free spinach meatballs have been a staple at our house for many years. They are super simple to throw together and are made with nutritious, filling ingredients. They are made with oat flour so you won't have to track down gluten-free bread crumbs made with questionable ingredients. Deliciously crispy on the outside and moist and flavorful on the inside. They are quick enough to make on a busy school night, but fancy enough to be the centerpiece of a Sunday night family dinner. Reminiscent of the "Italian style frozen meatballs'' you've probably bought at a grocery store except healthier, tastier, and gluten-free!
These beauties are oven-baked, which means no standing at the stove frying them or having to get the crockpot out. Plus they freeze beautifully well. Although actually having enough leftovers to freeze might mean you have to double the recipe! These little guys can be addicting! I've usually snuck at least four before we even sit down to eat.

- Preheat
Preheat the oven to 400 and line a baking tray with parchment paper. Make sure you use a tray with high sides, as a lot of oil will end up in the tray.
- Mix
Mix all ingredients well in a large bowl. I've found the paddle attachment on my stand mixer works the best. You do not want to over-mix the meat, but make sure the spinach is mixed in well and the egg is beaten.
- Scoop
Scoop meat into one and a half inch balls. I like to use my mini cookie drop/ice cream scooper for this so they all come out in uniform size. I typically get around 24 meatballs from one pound of meat.
- Roll
Once they are arranged, use your hands to roll and smooth the meatballs then brush them with a light coating of olive oil. This is what gives the outside their nice crisp coating. The meatballs will seem soft and almost too wet, but don't worry. This just means the insides will stay moist and delicious.
- Bake
Bake for around 20-25 minutes until they are cooked through and the outsides are dark brown and crispy. Enjoy as you fight your husband off with a fork.
