Gluten-Free Creamy Italian Pasta
Simple, hearty, comforting pasta meals were something we really missed after we stopped eating gluten. So to be able to cook this creamy Italian pasta again with a noodle that was not only delicious, but also clean and organic was a double bonus. It’s perfect year round, cooked with just two pots, and a full healthy meal in just one dish. Plus it’s creamy and delicious so really it’s an all around winner.

A little about this recipe
Bear with me, I realize a pasta dish doesn’t make a lot of sense in a gluten-free blog. But I promise there's a reason I’m sharing it. One of our biggest struggles when we first went gluten-free was finding recipes that were naturally free of gluten (things like rice, potatoes, and quinoa) as opposed to recipes just made with gluten-free replacement items (things like all-purpose gluten-free flour). So for the longest time, we avoided gluten-free noodles of any kind. Most of the noodles we tried had a gummy texture and completely fell apart when cooked. They typically included a variety of different flours and preservatives, and it was nearly impossible to find an organic version.
So when we found Jovial gluten-free noodles and they were organic and made with one single ingredient we were delighted. We were even more delighted when they tasted amazing. The first time I cooked them, I had to pull the box out of the recycle bin to convince my husband they were actually gluten-free! And they have been our go-to ever since. Jovial noodles are made with organic brown rice flour. Nothing else. Real food with no preservatives is always the goal.

Gluten-Free Creamy Italian Pasta

Instructions
Start by boiling about 12 cups of salted water, and cook your noodles according to the package.
While noodles are cooking, saute your onion in avocado oil on medium heat. When it is translucent and slightly browned add your minced garlic and cook until just fragrant, then add the italian sausage.
Add salt, pepper, and optional red pepper flakes to the sausage, onion and garlic and brown until the sausage is cooked through.
Add chopped spinach and cook until wilted and bright green.
Turn the heat to low, and pour in heavy cream and parmesan cheese. Stir slowly until the cheese has melted, just a minute or two.
Add in your drain pasta noodles and stir to coat ( be sure to reserve some plain noodles for whichever of your kids will refuse to eat this delicious meal. This pasta is too good to spend the whole dinner arguing with kids. Let them eat butter noodles; more creamy italian pasta goodness for you).
