One Pan Sweet Potato Hash

A little about this recipe
This colorful, gluten-free, one-pan meal has been a favorite at our house for many years. It was one of the first dinners we perfected when we started focusing on cooking real, nutritious meals from scratch. Years later, when we decided to cut gluten out of our diets for health reasons, this recipe stayed a familiar favorite. Revamping your entire diet can be overwhelming, and we were glad that this naturally gluten-free dish was something we didn’t have to change, adapt, or overthink. It’s become a reliable old friend that we still happily enjoy on a regular basis.
Although the term ‘hash’ implies a breakfast dish, we serve this as a main course for dinner. With multiple veggies, ground meat, and a perfect sweet/ savory balance it’s all you need for a complete meal. And since it all cooks in one large skillet it's an easy weeknight dinner to toss together.

One Pan Sweet Potato Hash
Equipment: large cast iron or regular skillet

Add butter and avocado oil to a very large skillet. This blend works well together because the butter adds flavor while the avocado oil helps lower the burning point of the butter.
Once the oil is hot add the onion and saute until soft and fragrant. Then add in the sweet potato and carrots. Season with salt and pepper. Saute until the vegetables are soft and starting to brown. Make a well in the center of the pan and add the garlic, adding more oil if necessary. If you add the garlic too early it may burn, and burnt garlic is a hard flavor to cover up. But do let the garlic saute in the oil until very lightly brown, and very fragrant. Then stir it into the rest of the vegetables.
Push the veggies to the outside of the pan and add your meat into the center. Start to brown the meat, while seasoning with salt and pepper. Once the meat is browned, stir everything in the pan together.
Sprinkle with 1-2 tbsp of arrowroot powder, and stir it in. This will help to bind the ingredients together and give it a slightly creamy texture. It will not be a gravy, but will just make for a thicker more cohesive dish. You can absolutely leave it out if you wish, but I do think it pulls the whole meal together.
Finally, stir in the chopped spinach or kale and stir until the greens are wilted. This should take about five minutes. Season again with salt and pepper and serve.
