Gluten-Free Dinner Rolls
These fluffy, soft, buttery gluten-free rolls are easy to make and incredibly versatile! Made with all natural ingredients, this recipe makes amazing dinner rolls and perfect hamburger or sandwich buns!

A little about this recipe
These lightly sweetened, oat-flour dinner rolls wear many hats around here. They make perfect gluten-free hamburger buns in the summertime when we grill burgers at least once a week. But they are amazing enough on their own to be a perfect dinner roll side dish. We also eat them for breakfast and lunch! They are great toasted with just butter, but also make wonderful little sandwiches!
Honestly, I can’t say enough about how good these buns are. They are soft, and fluffy, and oh so buttery. The flavor is perfect, and there’s no weird gumminess that GF buns sometimes get. Plus the recipe is incredibly easy to follow, and even though the rise time means you need to plan ahead a little bit, it’ll be worth it once you taste these rolls. Next thing you know, you’ll be happily making them multiple times a week!!

Preheat your oven to 350 degrees.
Pour all of your ingredients into the bowl of a food processor, wet ingredients first. (Milk thru salt). Mix with a dough hook for 5-7 minutes, scrapping down the sides after the first minute or so. Dough will be very sticky and thick.
Once the dough is done mixing. Turn the oven off.
Using a 1/3 cup measuring cup, scoop dough into lined cookie sheet. You may need to use a spoon to help scrape the dough out, as it will be sticky. You can size the buns as big or small as you like. For dinner rolls, I make around 12 buns. For larger hamburger buns, I make around 9.
You can shape the buns at this point and flatten them down slightly. You may need to wet your fingers slightly or the dough will stick.
Place buns in the warmed oven and let rise for 1 to 2 hours, or until visibly risen.
When the buns have risen, pull them out of the oven and preheat it to 325 degree. While the oven heats up, melt 2-3 tablespoons of butter over low heat in a sauce pan. Brush the tops of the buns with melted butter.
Bake for about 20-25 minutes or until the tops are a golden brown.
