Vanilla Cake: a gluten-free treat
This gluten-free cake uses only handful of ingredients and has no refined sugar! It's not too sweet, but still satisfies all your cake cravings!

A little about this recipe
A perfect vanilla cake recipe is essential to any kitchen arsenal. And this delicious gluten and refined sugar-free cake is just that. It's easy to make and only takes one bowl and a hand mixer. There’s zero sifting, whipping, adding alternate amounts of egg white and dry ingredients, or manically timed mixing involved. Just toss everything in a bowl and hit it with your hand mixer until it is all combined. One lovely thing about most gluten free recipes is you can’t over mix the batter.
This recipe makes one 8 inch cake, about 6 regular cupcakes or 12 mini cupcakes. It’s a classic recipe that is tasty enough to make a perfect cake, but easy enough to make for a quick treat just because. The almond flour, eggs and butter make them rich and filling, and since they are only sweetened with maple syrup you won’t feel guilty eating a whole handful of mini cupcakes!

Pre heat oven to 350°
Soften butter and let eggs get to room temperature. (You can set the butter on top of or near your stove as it preheats to slightly warm it. Also you can add cold eggs into a bowl of lukewarm water for 5-10 minutes)
Add all of your ingredients to a large bowl. Yes, all of them. Mix with a hand mixer (or whisk if you’re feeling ambitious) until there are no lumps and the batter is uniform.
Pour into a buttered 8 inch cake pan or lined muffin pan.
Bake 30 minutes for cake and 15-20 minutes for cupcakes (less for mini cupcakes). Until the tops are golden brown and slightly springy to the touch.
Frosting
For frosting, I like a simple maple buttercream made by whipping grass-fed butter ( 1 cup or 16 tbsp) then slowly pour in 1/4-1/2 cup maple syrup and 1/2 tsp vanilla extract while still whipping. Top with a few naturally colored sprinkles.
