Peanut Butter Chocolate Oat Cookies

These gluten-free peanut butter and chocolate oat cookies are a super healthy and tasty treat that you can feel good about snacking on all day long. I’m not afraid to admit I’ll happily let my kids eat them for breakfast. They are made primarily with oats, peanut butter and eggs so they are full of protein and healthy carbs for long-lasting energy. I stir in a few mini dark chocolate chips, because I choose my battles around here and my kids don’t usually trust cookies without at least some chocolate.
I like to use an even combo of oats and oat flour because it helps them hold together well and has a great texture. But in a pinch you could use all of one or the other. These cookies are soft, chewy and just the right amount sweet! Perfect for any occasion, or for no occasion at all! Enjoy!

Peanut Butter Chocolate Oat Cookies

Preheat your oven to 350°, and line a baking sheet with parchment paper or a Silpat.
In a small bowl, stir together your dry ingredients.
In a medium sized bowl, whisk together your eggs and maple syrup. When it’s beginning to come together, dump in the peanut butter and vanilla extract and stir well. It make take a minute or two, but it will eventually come together and thicken up!
When the wet mixture is evenly uniform, add in your dry ingredients and use a spatula to mix well.
Dump in your chocolate chips, if using, and mix again.
Using a small cookie scoop, place about 18-20 evenly sized, small scoops of dough onto your prepared baking sheet. Bake for about 9-12 minutes until the tops are only very slightly beginning to brown, they will still be very soft! Let them cool on the baking sheet for a few minutes, and then let them further firm up on a cooking rack. The cook time makes a huge difference here. If you bake for about 9 minutes, they are going to very gooey and soft and seem under-baked. My kids love them like this, but if you want them a bit firmer bake for around 11-12 minutes. I like the sweet spot right in the middle. The longer cook time makes them fluffy and firm but still very moist and chewy! Enjoy!!
