These protein heavy, absolutely delicious quinoa bites make a perfect party snack, appetizer or late night munchie snack! The recipe uses one cup each of cooked quinoa and cooked shredded chicken so it's a great way to use up any leftovers. They are a naturally gluten-free, healthy take on the boneless buffalo wings my husband and I used to eat obsessively. But these addictive little snacks are actually great for you and just as tasty!
The recipe couldn’t be simpler. Let your cream cheese come to room temperature, then stir together all of your ingredients. Scoop them into a mini muffin tray and boom, you’ve got a healthy, easy, gluten-free snack!

Preheat your oven to 350°, and line a mini muffin tray with parchment or silicone liners.
Let your cream cheese come to room temperature. The softer it is the easier it will be to mix together. You can set it in an oven safe bowl on top of the stove while it preheats.
Dump all of your ingredients into a medium sized bowl, and mix well. Make sure to incorporate the cream cheese as much as possible. It's ok to still see small clumps of it, we just don't want huge bites of just cream cheese.
Using a small cookie scoop or a tablespoon, spoon the muffin cups nearly all the way full. You can use your fingers to smooth out the tops slightly. The recipe should make 20 bites.
Bake for 18-20 minutes or until the tops are getting slightly browned and crispy looking.
